The summer black truffle (Tuber Aestivum) is highly prized for its excellent value for money and its ease of use.
Truffefrance now sells dried slices which offer the same characteristics as the fresh truffle. They come in a 100g jar, equivalent to 450g of fresh truffles, and can be used all year round on egg tagliatelle, risottos and in any sauce just like fresh truffles. To rehydrate them, just sprinkle them over your hot dish a few minutes before serving. The steam from the dish will restore the taste and shape of the fresh truffle.
You can also rehydrate summer truffles by leaving them to soak in a bowl of tepid water for around 25 minutes. Once rehydrated, drain the truffles reserving the water to use in your sauces or risottos.
